Recipe: FA'APĀPĀ (Samoan Coconut Bread)

Have you always wondered how to make that famous coconut bread you see Mum and Dad eat all the time?
Its still an all-time favourite recipe in a lot of our pasefika households and its really simple to make! A traditional dough made with few ingredients will surely have everyone out of their rooms and in the kitchen! Filling the house with that coconut smell that takes you back to the island of Samoa, now please take me there! Here's our amazing Cook Heather showing us how its made.
We have this as a treat some days and our tamaiti (children) love to eat it!

Ingredients:
2 cups all purpose flour
1 1/2 cups of shredded coconut
500 ml coconut cream
1 cup white sugar
You will need:
a mixing bowl
a spoon
and foil
Method:
Preheat oven to 200 degrees
Add flour into your bowl
Add shredded coconut
Add sugar and mix well
Then add coconut cream and mix well again
Once it is well combined, set the bowl aside and prepare our foil
Cut the foil into squares, each about 30-40cm wide (or however big is up to you)
Rub melted butter in the middle of each piece of foil making sure it is almost covered (dont worry about the sides too much)
Pour a good amount of the mixture in the centre of the foil
Fold the foil sides in then tuck the remaining sides under to cover our bread
Lay our breads flat on a tray and bake for 1-2 hours or until golden brown. (It will be a good idea to check after an hour, then every 10 minutes after that)
